Summer salad: Tomato, feta, pomegranate

A vitamin and antioxidant boost with this crisp and fresh Summer salad.

Since I (Digi K) was little, I had a thing for tomatoes. Where most kids are not very fond of tomatoes, I would ravish them. It seems it was even one of my first words.
And did you know that drinking tomato juice during a flight is makes your skin glow? Just saying…

Last weekend my mom made a delicious and refreshing salad with tomatoes and pomegranate. Ingredients known for their antioxidant values. Tomatoes contain a high level of lycopene, and pomegranate contains potassium and natural phenols.

Recipe

Ingredients:
500 grams of grape tomatoes
150 grams of pomegranate seeds
100 grams diced sheepmilk feta cheese
4/5 leaves of fresh basil
vinaigrette:
2 tbs of white balsamic vinegar
4 tbs of extra vergine olive oil
1 pinch of dried basil
1 pinch biological garlic powder
1 pinch of grind pepper

Start with the vinaigrette. Take a large salad bowl and mix the white balsamic vinegar, olive oil, dried basil, garlic powder and grind pepper. Slice the tomatoes in quarters. Add the dices of feta cheese and the pomegranate seeds. Top it with finely chopped fresh basil leaves. Voilà!

We had the salad as a side dish with marinated lambchops. Yummm!
