Thursday Treat: ShakingSupper

One of the best dinners I have ever had was one with a cocktail pairing. They turn out to be more interesting than just food + wine pairing.

Every Thursday it’s cocktailnight at the Supperclub, and every third Thursday it’s an extra special edition as ‘Queen of Bartending’, Tess Posthumus, throws it in the mix for the ShakingSupper. Guests can choose a 5-course dinner prepared by chef Joey de Vries -and paired with Tess’ concoctions- or just a bite with a cocktail.

We had the ‘full monty’ with the 5-course dinner and a different cocktail to match the dish. And of course, the Supperclub is not your regular kind of venue, so expect some entertaining as a side dish as well. From arty dance acts to a burlesque stripper, and the sexy tunes from DJ’s Sheila Hill or T Amore and the Wifebeaters.

This was our menu:

First course:
Coquilles, parsnip, lime and cucumber herring roe

Cocktail:
Monkey Business – Zapaca rum, banana puree and homemade cinnamon-clove syrup

Second course:
Pearl barley with chorizo

Cocktail:
Kriek Fizz – Kriek Boon, Absolut Vodka, fresh lemon juice and homemade chili orange syrup

Third course:
3 different preparations of chicken, mozarella, basil, tomatoes and olives

Cocktail:
Dirty Basil Martini – Beefeater gin, basil, olives abd dry vermouth

Fourth course:
Entrcôte, shallot and truffle

Cocktail:
Scottish Mist – Dilmah Lively Lime and Orange Fusion tea, Chivas Regal Scotch whisky, fresh lemon juice, sugar syrup and a dash of homemade winterbitters.

Fifth course:
Chocolate ganache, blue berries bavarois

Cocktail:
Halle Blueberry – Dilmah Berry Sensation tea, Mozart Dry liquor, fresh lemon juice, Galliano Ristretto liquor, Frangelico hazelnut liquor foam and homemade cinnamon syrup

Aside from the ShakingSupper on Thursday and the cocktailnights, Tess also composed an exclusive cocktail menu for the other days, consisting of daring tastes, special spirits and aromatic ingredients.
